2 T olive oil1/2 c. onion, chopped
1 clove garlic, minced
2 medium summer squash, chopped
1 can pizza sauce
8 oz. chopped tomatoes
1 tsp fresh oregano, chopped
1/2 tsp fresh thyme, chopped
1/2 tsp fresh rosemary, chopped
Using a large skillet, heat oil and saute onion and garlic until soft (2-3 minutes). Add the squash , pizza sauce, rosemary, theyme and oregano. Bring to a boil and add salt and pepper as desired. simmer approximately 8-10 minutes, covered.
Uncover and cook until mixtures is tender but not mushy.
Serve this relish hot, room temperature, or chilled.
