Roast Sweet Potatoes with Cardamon, chile, and cinnamon
1 lb. 5 oz sweet potatoes, peeled, and cut into 1 inch pieces
6 black cardamom pods, cracked,
1 cinnamon stick
2 small bay leaves
2 T vegetable oil
1/2 stick (1/4 c.) sweet butter
2 T hot chile sauce
preheat oven to 400
toss sweet potatoes along with the cracked cardamom, cloves, cinnamonstick and bay leaves.
Heat the oil and half the butter in an ovenproof frying pan, add the sweet potatoesa and spices, and toss in
the hot fat for 5 minutes.
Transfer to the oven and roast for 30-35 minutes, until the potatoes are tender and golden.
Remove the spices from the potatoes, add the remaining butter, the chile sauce, and some salt, toss well.
