Jalapeno and Corn Muffins
1 1/2 c. yellow cornmeal
1 1/2 c all purpose flour
2 T baking powder
1/2 c sugar
1/2 tsp salt
2 eggs
1/2 c milk
1/4 c vegetable oil
3 T honey
6 jalapeno peppers, seeded and diced
1/4 lb ham, diced
Preheat oven to 350
1. combine cornmeal, flour, baking powder, sugar, and salt together
2. Stir together eggs, milk, oil, and honey, the add dry ingredients to this mixture
3. Stir in diced peppers and ham
4. Pour the batter evenly into cups of 1-12 or 2-6 muffin tins (nonstick)
5. Bake in oven for 8 minutes or until toothpick comes out clean
