Salt & Pepper
Can be grilled, broiled, or bake in oven at 375 degrees.
Peel the eggplant, cut it in wedges, and place on squares of foil with a slice of onion, a bit of garlic, and a half tomato. Sprinkle with freshly ground pepper and salt, and add a leaf of fresh basil. Fold the foil like an envelope and broil, turning several times for 20 minutes or bake in oven or on grill for 20 minutes
