V Eggplant in Foil
You may cook this over a grill, in the broiler, or in the overn at 375 degrees. Peel the eggplant, cut it in wedges, and place on squares of foil with a slice of onion, a bit of garlic, and a half tomato. Sprinkle with freshly ground pepper and salt, and add a leaf of fresh basil. Fold the foil like an envelope and cook on the broiler, turning several times for 20 minutes. Or cook in the broiling oven for the same length of time.
