Cucumber Salad with Greek Dressing
3 medium cucumbers, peeled, halved, seeded, and sliced 1/4 in thick
1 tablespoon salt
2 tablespoons red wine vinegar
2 teaspoons minced fresh oregano
1 tablespoon minced fresh mint
1 medium clove garlic, minced
6 tablespoons extra-virgin olive oil
2 ounces feta cheese, crumbled (about 1/2 cup)
1. Toss the sliced cucumbers with the salt in a strainer or colander set over a bowl. Weigh cucumbers down to release water for an hour up to 3 hours. Transfer to a bowl.
2. Whisk the vinegar, oregano, mint, garlic, and oil together. Add cucumbers and toss to coat. Sprinkle with the cheese and serve immediately.
