V Black Bean and Rice Wraps
Prepare the beans first: If raw (not canned) soak beans overnight, drain water, and cook over medium heat for 90 minutes to soften.
Saute together these vegetables:
Dice one medium onion, 1 red bell pepper, 2 jalapeno peppers (remove seeds for less heat), peel and mince 3 garlic cloves.
Then Add 1 tsp cumin and 1 1/2 tsp dried oregano
Drain the black beans and add to sauted vegetables.
Cook 3 cups of rice -
Chop one cup of cilantro and quarter a lime.
add cilantro and lime last.
Now place black beans and some rice in the center of a lettuce leaf, top with some guacomole if you desire.
Fold and roll like a cigar and serve.
