Shirred Eggs with Spinach and Paprika



Shirred Eggs with Spinach and Paprika

olive oil spray
4 oz spinach leaves, coursely chopped (1 1/3 c.)
4 large eggs
2 T. heavy cream
salt, pepper, paprika to taste

Preheat oven to 375, spray 4 ramekins with olive oil lightly

Divide spinach into each ramekin, and break one egg over the top.

Drizzle 1/2 T. of cream over each egg and season to taste with salt, pepper, and paprika.

Bake 10 - 14 minutes until eggs are prepared as desired; firm or runny
