Sweet Potato & Pork Filling
Homemade or purchased tart shells
Olive oil cooking spray
12 oz. pork tenderloin, cut in 1 inch cubes
1/2 cup diced onion
12 oz. sweet pototo, peeled, diced into 1 inch cubes
1 tsp finely chopped rosemary
1/2 tsp salt
1/4 tsp ground black pepper
1 TBSP pure maple syrup
1 TBSP whole-wheat flour
1/2 tsp hot sauce, optional
1. Coat medium saucepan with cooking spray and set on medium heat. Add pork and onion, and cook for 4 minutes until pork is cooked through. Remove mixture from the pan and set aside.
2. reduce heat and add potatoes and 1 cup water . Cook until potatoes are tender.
3. Add the pork mixture back to the potatoes. Add rosemary, salt, pepper, maple syrup, and flour. Stir frequently about 2 minutes. Add 1/2 cup water (be sure to scrape up brown scribbles from the bottom of the pan)...cover and cook about 3 minutes till thickened. At this point add your hot sauce if you like.
3. To serve; place a scoop in a warm tart shell
