4 medium sized zucchini, julienned,
1/4 c. virgin olive oil
2/3 c. pesto
If you have the time combine zucchini and salt in a colander. Toss to mix and set it aside to drain for 30 minutes. Transfer the zucchini to a clean kitchen towel and wring it dry.
In a skillet, heat the oil over medium heat and add the zucchini and saute until crisp...about 3 minutes
Add your warm pesto and toss to mix it well...serve at once.
