Fennel Cole Slaw
Mayonnaise 1/4 c.
Lemon Zest 1/2 lemon
Lemon Juice, fresh 1/2 lemon
Pecans (or other nut) chopped 1/4 c.
Raisins 1/4 c.
Fennel bulb, (finely sliced and soaked in lemon water)
Chives, chopped 1/4 c.
Flat leaf parsely, chopped 1 Tbsp
Mustard Seed 1/2 tsp
Sugar 1/2 Tbsp.
1. Mix all ingredients together
2. Toss in shaved fennel before serving. (keep the dressing separate until ready to serve...Dressing can be held for 5 days.
