V Traditional Chocolate Dipped Strawberries
Delicious served with coffee following a meal or as a delicate appetizer for two.
8 oz. dark or bittersweet baking chocolate
1/2 tsp safflower oil
1 tsp peppermint extract (not flavoring)
12 -16 large perfect strawberries with stems intact
Using a double boiler, melt the chocolate, oil and peppermint together until the mixture is creamy and smooth. Hold each strawberry gently by the stem and dip it into the warm mixture. Dip only to the shoulder of the strawberry. Place them on a waxed paper sheet to set.
Makes 12-16 coated strawberries
