Strawberry Breakfast Omelet
4 eggs
1 T superfine sugar
1 T half and half
pinch of salt
Butter, for cooking
4-5 oz. fresh strawberries, hulled, and sliced lengthwise
In a bowl, beat together eggs, sugar, half and half, and salt until frothy. In a small skillet, heat enough butter to cover pan, pour in half of the egg mixture, and reduce heat slightly. When the eggs are cooked through, spread half the strawberries on one side of the omelet, fold it in half, and serve at once. Repeat the process for another omelet.
