V Strawberries, sugar snaps, and Edible Pansy Salad
Pansies and violets are great garnishes for salads, and a good source of vitamins A and C.
Red Oak leaf lettuce, torn into bite-sized pieces
12 oz. small fresh strawberries, hulled
10 sugar snap peas
1 stalk celery, finely chopped
1 mango, peeled and sliced
1 handful pansy blossoms, gently rinsed
2 T hazelnut oil
1 T apple cider vinegar
1 T freshly squeezed lemon juice
1 T finely minced hazelnuts
Freshly ground black pepper, to taste
In a salad bowl, combine all ingredients, except dressing. In a small bowl, mix together dressing ingredients. Toss dressing through salad gently, so as not to bruise flowers, and serve immediately.
