Scrumptious Strawberry Mouse
Hint: If you rinse your ring mold with cold water and chill it prior to filling it's easier to unmold later.
1 c. pureed fresh strawberries
1/2 pt. small-curd cottage cheese
2/3 c. plain yogurt
grated zest and juice of 1/2 lemon
2 T water
2 envelopes (1/4 oz) unflavored gelatin
2 egg whites
3 peaches, peeled, sliced, and dipped into lemon juice
Unstemmed whole strawberries, for garnish
thin slices melba toast
In a large bowl, combine strawberry puree, cottage cheese, yougurt, and lemon zest and mix well.
In a small saucepan, combine lemon juice with water and sprinkle with gelatin; let sit 1 minute. Over
low heat, stri mixture until gelatin is dissolved completely and immediatelty stri gelatin into strawberry
mixture. In a another bowl, beat egg whites until stiff and fold them into the strawberry mixture.
Spoon into a rinsed and chilled 3 cup ring mold, cover, and refrigerate until set, about 4 hours.
To serve, dip mold into hot water for 10 seconds, cover with a serving plate, and invert. Heap peaches
and whole strawberries in the center of the ring and arrange melba toast around it.
