Mushroom Soup Extra
3 T olive oil
6 oz. mushrooms, sliced
sea salt & fresh groud pepper
1 small white onion, diced
2 garlic cloves, minced
2 sprigs fresh thyme, saving some extra for garnish
oz white wine
1. Heat oil in Large pot and saute' mushrooms for 2-3 minutes Season with salt and pepper
Set aside a few mushrooms to use as garnish
2. Add onion and garlic and reduce heat. Simmer until onions are translucent
3. Stir in thyme and deglaze with wine
4. Add 3 cups of water and simmer for 10-15 minutes
5. Remove from heat and place the whole mixture in a blender. Puree until very smooth adjusting
seasoning as desired
Garnish with the saved mushrooms and additional thyme. Another option is to garnish with chervil and diced fingerling potatoes (micro diced and sauteed lightly).
