Kale Pesto
1/2 c. pine nuts (I used cashews)
2. cups packed kale torn into pieces
2-3 cloves of garlic
2-3 tablespoons olive oil
1 tsp lemon juice
1/2 tsp salt
2-3 basil leaves (optional)
1/2 c. fresh parmesan cheese, shredded
Add all but the cheese together, and pulse in a food processor or blender until blended well - yet still chunky. Add the cheese and stir.
