Winter Squash Bars
Yields 24 bars.
2 cups winter squash or pumpkin
1 cups sugar
oil
4 eggs
1 teaspoon vanilla
teaspoon salt
Beat together in a mixing bowl.
1 cup flour
1 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
Mix in. Pour into lightly greased 11 x 17 inch pan. Bake in preheated oven at 350 F for 25- 30 minutes
