Baked Tomatoes with Goat Cheese
2 c. cherry tomatoes, halved
1 T extra-virgin olive oil
salt and freshly ground pepper
1 garlic clove
fresh basil sprigs
1 slice whole wheat sandwich bread
2 ounces of goat cheese
1. preheat oven to 400 F
2. place tomatoes in a single layer in a 1 qt. baking dish, drizzle with olive oil and sprinkle with salt and pepper.
3. bake for 15 minutes until they begin to juice
4. While you wait; mince the garlic and basil in a food processor and tear the bread into pieces. Add the bread to the processor as well and process until fine crumbs appear.
5. remove the tomatoes from the oven and crumble the goat cheese over the tomatoes. Sprinkle the crumbs over the goat cheese. Return it to the oven and bake another 5 minutes or until the cheese is melted and crumbs are golden. Eat these hot.
