Puree 1/2 avocado, 1/2 c. Parsley and mayonaise, 2 TBSP. water and white vinegar each, 1 TBSP Tarragon, 1 Anchovy, and 1/4 tsp salt in a processor.

Chill for up to 3 days ...makes 1 c.
