V Cucumber Kale Salad
10 c. cucumber, cubed
Approximately 7 kale leaves, center stem removed and cut into short ribbons
1 spring onion to taste, sliced thinly
1 bunch of basil finely chopped
1 small carrot peeled and shredded
pepper to taste
4 c. water
1 c. vinegar
1/2 c. sugar
Mix liquids and dissolve sugar. Pour over the rest of the ingredients. Let stand overnight in refrigerator. Serve and enjoy!
