Blue Potato Honey Mustard Salad
Yummy! This is even more nutritious and colorful if skins remain on the potatoes.
2 lbs blue potatoes, cut into pieces
1/2 a green bell pepper, diced
1/2 a red pepper, diced onion.
half of a sweet onion, diced
Dressing: May be served warm or cold
1/3 c. honey
1/4 c. Dijon mustard
1 T cider vinegar
1 T balsamic vinegar
1/2 tsp celery seeds
1/2 tsp garlic powder
1 tsp kosher salt
1/2 tsp freshly ground pepper
Steam potatoes until tender, then toss with peppers and onion.
Whisk dressing ingredients together and gently toss with potatoes. This salad may be served warm or cold.
