Kohlrabi Salad

**A perfect crunchy, spicy, cold salad for summer.
1 head kohlrabi, cut into matchsticks
1/2 apple, cut into matchsticks
2 Tb rice vinegar
2 Tb sesame oil
1/2 Tsp sambal oelek or birds eye chili
a pinch of cumin
1/2 tsp fish sauce (optional if you want this vegetarian)
3 Tb cilantro
salt and pepper to taste

1. With a sharp knife cut off arms from the kohlrabi and peel it with a peeler.
2. Cut kohlrabi and apple into matchsticks using a sharp knife or mandolin
3. Toss kohlrabi with the rest of the ingredients and chill before eating
