V Garlic Scapes & Chard Wrap
This was a quick dinner the other night with strawberries on the side and before I had my first bite my children were asking me to make more!! Trouble is: I wung it!
Onion - chopped finely
Garlic Scapes (1 1/2) chopped in tiny itty bitty slices
8 leaves of chard and kale cut in slices
Saute the onion and garlic in olive oil while chopping greens. Then add greens and allow to cook down (I added a little water to keep the processing moving along quickly).
Warm tortillas in the oven or microwave
When greens are wilted and nearly cooked - add eggs to the skillet and scramble all together. When done scoop into each tortilla and roll.
Great served with a large fruit salad on the side or a fruit smoothie for breakfast.
