Tomato and Mint Salad
2 pounds assorted heirloom tomatoes
1 c. small fresh mint leaves
2 T red wine vinegar
2 T olive oil
1 clove garlic, minced
1 tsp sugar
1/8 tsp salt
lettuce leaves
8 oz. feta cheese
sea salt/pepper

Slice tomatoes. In a bowl and combine tomatoes and mint. Whisk together the vinegar, oil, garlic, sugar, salt and pepper and pour over the tomatoes and toss. Serve on a bed of lettuce and sprinkle with feta.
