Creamy Lemon Coleslaw
The lemon may surprise you - but gives a nice springtime flavor!
1/4 c. mayonnaise
2 T sour cream or sour cream alternative such as Tofutti
2 tsp sugar
Grated zest and juice of 1 lemon (zest is outer peeling grated)
1/2 tsp celery seed
1/2 tsp salt
1/4 tsp reshly ground black pepper
1 small head of green cabbage, thinly sliced (discard ribs)
1 carrot, peeled and cut into thin slices on a diagonal or matchsticks
1 T chopped fresh parsely, (garnish)
In a large bowl, whisk together the mayonnaise, sour cream, sugar, lemon zest, lemon juice, celery seeds, salt, and pepper until smooth.
Add cabbage and carrots to serving bowl and toss thoroughly to coat with dressing. Garnish with chopped parsley. Chill 2 hours. Let stand at room temperature for 20 minutes before serving.
