Celeriac Salad
1 pound celeriac
1 1/2 T wine vinegar
2 1/2 T mayonnaise
2 T Dijon mustard
2 T heavy cream
1 1/2 tsp chopped tarragon

Peel celeriac and cut into matchstick pieces, and place in bowl of ice water. Drain celeriac and toss with vinegar. Combine mayonnaise, mustard, cream, tarragon, salt, and pepper. Toss with celeriac and chill before serving. Serves 4
