Winter Cornbread with Scallions
4 1/2 c. unbleached flour
1 c. yellow cornmeal
2 tsp. baking powder
3/4 tsp salt
1 1/4 c. milk
2 Tbsp honey
1/2 c. vegetable oil
8 scallions (white and light green parts only) trimmed and thinly sliced
Optional : add 3 slices of bacon cooked and crumbled...folded in before baking
1. Heat oven to 400 F
2. Whisk flour, cornmeal, baking powder and salt together in a bowl.
3. Mix together next ingredients before adding to dry mix: milk, honey, egg, oil, scallions, and 2 grinds of
black pepper until well mixed
4. Pour the batter into a hot skillet and bake until the top is golden and firm 20-25 minutes. Cool in the
pan for 5 minutes and serve warm or room temp.
Yummy with a crisp crust in a cast-iron skillet!
