Maple Orange Sweet Potatoes
6 medium-large sweet potatoes
1/2 c. butter or margarine, melted
1/2 c. real maple syrup
1 tsp grated orange peel
Juice of 1 medium orange
1/2 tsp salt
Fresh rosemary sprig, if desired
1. Heat oven to 375. Line a cookie sheet with foil. Prick the sweet potatoes a few times and lay them
on the foil. Bake for one hour or until very tender. Let cool 15 minutes.
2. Cut potatoes in half lengthwise, scoop pulp into large bowl. Mash pulp well. Add butter, syrup,
orange peel, orange juice and salt; mash well. Garnish with rosemary sprig.
