Whipped Chipotle Sweet Potatoes
5 1/2 lbs. sweet ptoatoes scrubbed (fewer if you have less people)...this serves 8-10!!
1 TB. minced chipotle chilies mashed to a paste
3 TB unsalted butter, cut into 3 pieces and softened
Preheat oven to 450 with the rack in the middle. Line a rimmed baking sheet with foil. Butter a 2 qt. shallow glass baking dish
Prick each sweet ptotato several times with a fork or skewer. Then bake on baking sheet until very soft. 1 - 1 1/2 hours
Reduce oven temp to 350
When cool enough to handle halve potatoes and scoop flesh into a bowl. Beat potatoes, chile paste, butter and 1 tsp. salt with an electric mixer at medium speed just until smooth, then spread in baking dish.
Bake whipped potatoes until heated through 20-25 minutes.
**Whipped potatoes can be prepared and spread in a baking dish 1 day ahead and chilled - covered. Bring to room temperature before baking.
