V Spiced Sweet Potato Fries (Chef Cory)

Oil: can be Vegetable, Olive, Peanut
Spice Mixture: grind finely- oregano, paprika, and cayenne (also found online at butcherandbakerstore.com)
Wash Sweet Potatoes
Peel potatoes and place peelings in your compost. Cut ends from potatoes and sides to square off the potato. Save these slices in another bowl for creating sweet potato soup the next day. Create slices just shy of 1/2" wide and long. Place these slices into a bowl of water to soak for 15 minutes. Slices should be uniform in shape to allow the fry to cook evenly. Remove the slices and blot with cheesecloth, paper towel, or tea towel to remove water.
Place a large handful of fries in a pot of hot oil on your stove or in a fryer at 350 degrees until golden...maybe 5 minutes.
Remove and place in bowl or on paper towel to drain when finished. Sprinkle lightly with sea salt and a pinch of the spice mixture.
What a great flavor!!
