Garlic Scape Tapenade
GARLIC SCAPE TAPENADE
1/3 to 1/2 pound garlic scapes (I always go with the theory 'more is better'....)
1/2 cup olive oil (I use a little less)
2/3 cup green olives (I use the regular ones with the pimientos)
1/4 cup roasted red pepper (again I go a little 'heavy' here)
2 tablespoons lemon juice
1/8 teaspoon black pepper (or to taste...)
Trim scapes and cut into large sections. Combine all the ingredients in a food processor and chop fine. DO NOT PUREE.
Can be served as an appetizer or snack on fresh cut veggies, crackers or toasted Artisan, French or Italian bread.
