Swiss Chard Pesto
2 large garlc cloves (or use scapes)
2 c. packed chopped swiss chard leaves
1/2 c chopped walnuts (other nuts are fine)
1/4 c. grated Parmesan cheese
1/4 c. parsley leaves
1/4 c. olive oil
1/2 tsp salt
1/4 tsp pepper
6 oz. pasta, cooked according to directions on package
Pulse the garlic in a food processor to chop. Add chard, nuts, grated parmesan and parsley; whirl until finely choippped. Scrape down inside of bowl. Add oil, salt,and pepper and process just until smooth. Serve with pasta and shaved parmesan.
