1# spicy pork sausage
3 cups chopped onion
1 1/2 c. sliced carrots
24 oz. cut and washed turnips greens
48 oz. chicken broth
2 -15 oz. cans black eyed peas, drained and rinsed
1 -14.5 oz can of fire roasted tomatoes (or fresh will work too)
1 tsp crushed red pepper
1/2 tsp ground black pepper
1. In a large stock pot, combine the sausage, onion, and carrots. Cook over medium high heat, stirring frequently for 7-10 minutes. Make sure sausage is cooked through.
2. Add turnip greens and cook stirring constantly for 3 minutes or unti they wilt.
3. Add chicken broth, black eyed peas, tomatoes, red pepper, and black pepper, and bring to a boil. Reduce the heat and simmer for 35minutes. - or until the greens are tender.
