Strawberry and Yogurt Tart
Prepare a simple hazelnut crust first if you enjoy the flavor of hazelnuts...otherwise any prepared tart shell can be used for this recipe.
Hazelnut Crust
1 1/2 T butter, softened
1 c. crushed zwieback
2/3 c. ground hazelnuts
1 tsp. finely grated orange zest
In a bowl, combine all ingredients and mix well. Press into a 9 inch pie plate or tart pan.
Filling:
12-16 oz. fresh strawberries, hulled and halved
Pinch each: ground nutmeg, cinnamon
2 T honey
1/2 pint plain yogurt
6 oz. cream cheese, softened
Vanilla extract, to taste
Pistachio nuts, for garnish
Whipped cream or ice cream (ala mode)
Reserve some strawberrie sfor garnish. Cover the base of the crust with remaining berries, sprinkle with nutmeg and cinnamon, and drizzle with honey. In a bowl, combine yougurt and cream cheese, blend thoroughly, and season with vanilla extract. Spoon yogurt mixture over strawberries and garnish with reserved berries. Chill well and serve with whipped cream or ice-cream.
