Mexican Omelet with Purslane
1 c. purslane with stems, diced
1/2 c. chopped onoin
tab of butter
garnish optional* diced tomatoes, salsa, and cheese
rinse purslane, add diced onion and purslane to a hot skillet. Saute about 5 minutes and add eggs. Cook as you would a large omelet.
