Roasted Orange Butter Beets
*Roasting brings out the great flavor of the beets!
1. Preheat oven to 400 F
2. Wash the beets, but do not peel. Divide between two sheets of heavy-duty aluminum foil and wrap each to form a well-sealed packet. Roast for 50-60 minutes, or until the largest beet is easily pierced with a fork. Remove them from the oven and open the packets, and let cool. When the beets feel cool enough to handle, peel and cut into slices or thin wedges.
3. Melt the butter in a large skillet. Add the orange juice concentrate and stir until well blended. Add the beets and toss until hot. Season with salt and pepper to taste. Serve them hot.
