V Cucumber Salad with Spicy Soy Dressing
3 medium cucumbers, peeled, halved, seeded, and sliced 1/4 in thick
1 tablespoon salt
1 tablespoon soy sauce
3 tablespoons rice vinegar
1 teaspoon chili paste
1 medium clove garlic, minced
1 tablespoon sugar
3 tablespoons toasted sesame oil
1 tablespoon sesame seeds, toasted
1. Toss the sliced cucumbers with the salt in a strainer set over a bowl. Weight down to release water for up to three hours.
2. Whisk the soy sauce, vinegar, chili paste, garlic, sugar, oil, and sesame seeds in a bowl. Add the cucumbers and toss to coat. Serve chilled or at room temperature.
