V Grilled Vegetables and Black Bean Salad
grilled squash, peppers, onions, and cherry tomatoes seasoned with rosemary, thyme, hint of vinegar, and salt and pepper

1/2 c. finely chopped cilantro
zest of lime squeezed 3 times
1 avocado, halved and pitted and chopped
2 c. black beans (if dried - soak and cook first)

combine all the ingredients in a large bowl and chill 1 hr. before serving.
