Holiday Carrots
Ingredients:
8 carrots
1/2 c. Water
1 can crushed pineapple
1/2 c. tart apple, diced
1/2 c. dried cranberries
1/3 c. honey
1 T lemon juice
1/2 tsp. salt
1 1/2 T butter, melted
1 1/2 T flour
1/2 tsp ground cinnamon
1/2 c. chopped walnuts, toasted

Directions:
In a saucepan bring carrots to a boil, then simmer for 5 minutes
Add pineapple, apple, cranberries, honey, lemon juice and salt and cook for 4-5 minutes - Stirring occasionally
Combine the butter, flour and cinnamon together and stir into the pan of fruit ingredients. Bring to a boil, cooking for approximately 2-3 minutes until the sauce thickens.
Sprinkle with the walnuts (pecans are fine too) ...serve
