V Salad with Pears and Maple Vinaigrette
1/4 c. maple syrup
2 T balsamic vinegar
1/2 tsp Dijon mustard
1/4 tsp salt
1/4 tsp pepper
1/4 c. vegetable oil
1/3 c. pecan halves
8 c. torn mixed salad greens
3 medium pears, peeled, cut into wedges
1/3 c. sweetened dried cranberries
In a small bowl, mix all vinaigrette ingredients except the oil with a whisk. Beat in the oil until blended.
Place pecans in a 1-cup microwaveable measuring cup and microwave uncovered on High for 2 minutes or up to 2 min and 30 seconds. Stir every 30 seconds until lightly browned.
Divide the salad greens among 6 plates and arrange pear wedges on greens. Sprinkle with pecans and cranberries, then drizzle with the vinaigrette.
